This is a dessert that I created to pay homage to my mom who made a simpler version of this cake when I was younger. I remember it was moist yellow cake sprinkled with cinnamon and brown sugar and when it came out of the oven you poured frozen concentrated orange juice on it, what’s not to like? We make ours with an orange scented olive oil cake that we swirl in a dark brown sugar and cinnamon. We top it with a cookie crumble before baking. When it comes out of the oven it recieves a nice soak of fresh orange juice. After it cools it is topped with tangerine mousse, vanilla chantilly, candied orange, some more crumble and crunchy bits. Tastes like my childhood, just more homemade!
