I like a good pun about as much as I like pastry and I’ve liked mushrooms pretty much since I was brave enough to try them for the first time, so this is a no brainer. Whether you eat The Breakfast of Champignons for breakfast or just an afternoon snack, or light lunch dipped into what has become our infamous tomato soup, you’re in for a treat. At least three varieties of mushrooms are cooked down into a mushroom bechamel, or roasted and folded into said mushroom bechamel with thyme, mascarpone, and grana padano cheese to make a super rich and creamy mushroom filling. This filling is placed on top of delicate flaky croissant dough and topped with Swiss cheese for additional melty deliciousness.
