Sometimes in the quest for the flakiest of flaky croissants and crispy baguettes I forget how enjoyable soft bread can be. Bressane is all of that and more. A traditional pastry of Bresse made from delicate and rich brioche just barely kissed with sugar and orange blossom water. Just prior to baking we brush the dough with milk and a sprinkling of vanilla sugar. A few cubes of butter moisten the dough as it bakes. It is truly a delicacy to savor.
