I don’t know that I can ever really believe my mom when it comes to the pastries I make, but she said this was her favorite version of carrot cake that I have ever made. She may be telling the truth because it was the simplest carrot cake we have ever made. Two nice layers of carrot cake sandwiched and topped with the creamiest of cream cheese frosting. Adorned with ginger poached pineapple and raisins, and candied spiced pecans. Hopefully it will make your mom as happy as it makes my mom!
