I didn’t grow up eating chestnuts or chestnut desserts. It wasn’t until I started my apprenticeship that I ever tasted chestnuts. I think I was hooked with my first Mont Blanc. Chestnut is a flavor I love and usually think of during winter. This year we created a chestnut eclair with vanilla bourbon cream, crunchy white chocolate almonds, traditional chestnut cream, candied chestnuts, and tangerine pate de fruit. I like this dessert a lot.
