For me this is the perfect chocolate cake for spring. It is dark chocolate and intense, but if you let the cake warm up a bit the texture of the chocolate mousse lightens dramatically. The marzipan in the cocoa cake creates a fruity, light, and super moist cake. Luxardo cherries,(the ones in your favorite cocktails) and a fruitiness and acidity to the cake as well.
