There are two kinds of people, those that like chocolate and fruit together and those that don’t. I like chocolate and fruit, but find that most don’t, at least in this country. Fruit really helps balance chocolate, but sometimes you can also balance chocolate with other chocolate. In this cream puff dessert we balance rich, intense dark chocolate cream, with a lighter dark chocolate mousse, an even lighter whipped milk chocolate chantilly, and even a touch of vanilla in a chocolate covered macaron. We balance all of those different creams by folding in some crunchy chocolate pearls and cocoa nibs. Life is all about balance.
