Pate a choux is the Jeep or Swiss Army knife of the pastry world. Sweet and savory applications, so many different shapes and classic pastries made from this relatively simple dough made with water, milk, butter, sugar, salt, and eggs. We make little cream puffs topped with brown sugar craquelin to give just a touch of sweetness.
