I don’t know why, but the new year always leads me back to classic and lighter flavors. I really enjoy cream puffs and eclairs and this is a nice hybrid. We bake eclairs with croustillant topping which provides a nice crunchy texture and just the right amount of sweetness as the dough itself has very little sugar at all. The cream is light and rich, but balanced with the acidity of fresh strawberries. So good!
