I am a firm believer that no matter how crazy things are in the world, it is still important to share moments with the ones we love. For me, I like to do that with desserts, maybe with coffee, maybe at a park, maybe after a family dinner, but shared with the ones I love and that mean so much to me. One of my favorite pastries has always been eclairs. I like them best with brown sugar croustillant on top instead of the more traditional fondant icing. The croustillant is less sweet and adds a bit of delicate crunch. While vanilla can be boring to some, it is actually a complex flavor that just seems to bring a smile to me.
