Many will debate whether a Gateau Basque is really a cake, but I don’t care. I love it and have loved it since the first time I tried it 25 years ago. In the simplest of terms, it is pastry cream baked between two layers of tender shortbread, sometimes with fruit, sometimes without. The shortbread is soft and cakey, but has a little bite, but definitely not crunchy. Ours features a delicate pastry cream flavored with lemon peel and cinnamon stick. I like fruit in my Gateau Basque so we’re adding a light cherry compote. It’s really simple, but really delicious. I hope you like it!
