Inspiration is all around us, especially during Girl Scout Cookie Season. I’ll be honest I wasn’t trying to make a cake that tasted like samoas, I was trying to make a cake that was full of coconut flavor and had a touch of chocolate. My inspiration was more on the mounds candy bars my children plucked out of their halloween loot and dumped in the old man bowl for me. When we put all the elements together however it was clear that it tasted like samoas, fortunately I like those as well. As a bonus for some of you this cake also happens to be gluten free. For those of you that aren’t concerned about gluten, I think you will like it as well.
