Dulcey chocolate is a chocolate I have been using for quite some time. It is essentially caramelized white chocolate. It isn’t an intense dark caramel, but more like a milky dulce de leche caramel. In this cake we make a dulcey chocolate mousse and layer inside of it bananas foster creme brulee and flourless dark chocolate cake. The cake sits on a dulcey chocolate, walnut praline, and crushed walnut crumble base. Like most of our cakes I think it tastes best if you let it warm up for a few minutes at room temp, be patient.
