Religieuse are my all time favorite choux pastries because it’s like getting a bogo! Made to represent a nun in her traditional habit outfit. Our choux, both head and body, are topped with my favorite brown sugar craquelin and filled with light salted caramel cream and rich dark chocolate cream. Milk chocolate chantilly made with Valrhona Caramelia completes the classic look and we add a square of dark chocolate for crunch and to be reminiscent of the traditional pastry. Eat it by yourself or share half with a friend!
