For many years people have asked us to make a pavlova and now we finally have. This pavlova has a traditional meringue made with egg whites, sugar, vanilla, lime zest, lime juice, and cornstarch. After a long low baking the meringue is cooled and brushed lightly with melted white chocolate and tossed in finely grated coconut. We then top it with key lime pie custard, vanilla chantilly, and fresh berries. It is nice an light, not too sweet, and gluten free if that is something that concerns you. Perfect for the warm days we’re having and the hotter ones ahead!
