It always seems that this time of year when it is often gray and dreary that I crave flavors of the tropics. Maybe I just need to take more vacations, but sometimes a little treat can make you feel far away from home. We start this dessert with fresh pineapple set in fresh mango puree. We put that on a base of our coconut frangipane cake and top it with soft meringue and lime zest. You end up with something that is light, creamy, tart and fruity, with the perfect amount of coconut cake. Oh yeah, it’s gluten free too!
