I think over course of the last ten years mille feuille, napoleons, and whatever else you want to call this dessert, has been the most requested item by guests, but for some reason I rarely put it on the menu. It is super simple in theory, light cream and delicate crispy flaky pastry. A little more goes into than that, but no need to talk about it, just enjoy it. No, there aren’t 1,000 layers in the puff pastry, there are actually 1,459 layers in each piece of puff pastry. That means in this mille feuille with three pieces of puff pastry there are 4,377 layers of pastry layered with light, rich vanilla cream, and a touch of raspberry sauce. See if you can count them all!
