Quite possibly our most popular eclair of all time has come back for a visit. Not quite a traditional eclair, it is made from four miniature cream puffs piped together to form on large cream puff eclair. The cream puffs are topped with brown sugar and cocoa shortbread to provide a nice little crispy sweet layer that I enjoy more than the traditional fondant icing. The inside of the eclair consists of a chocolate chunk cookie dough mousseline cream, chopped chocolate chunk cookies, a sprinkling of cacao nibs, and light vanilla creme chantilly.
