This year as the season was changing I had really been enjoying walnuts for the first time. I created this apple walnut cake to include some of my favorite fall flavors cinnamon, oats, and raisins. To do this we created a gluten free walnut cake and studded it with brown butter sauteed apples and golden raisins seasoned with vanilla bean and cinnamon stick. Before baking the cake we top it with a healthy dose of spiced oat crumble. After cooling the cake is dipped in blond chocolate and topped with blond chocolate chantilly. What is blond chocolate you say? Blond chocolate is a white chocolate that has been slowly and gently cooked so that the milk sugars caramelize similarly to making dulce de leche from sweetened condensed milk. We throw a light cream cheese mousse in there too, but who’s counting.
