This is a dessert that has made a few appearances over the years and is one of my favorites since the very first time I tried it so many years ago. A traditional French pastry made to celebrate the famous bicycle race from Paris to Brest. Traditionally made larger and in the shape of a circle to represent a bicycle wheel, but made in the perfect little three bite size for you to enjoy. Classic pate a choux pastry topped with hazelnut croustillant, and filled with a rich, but not too sweet hazelnut praline cream. Enjoy!
