I first tried passion fruit in a sorbet, it is definitely a unique fruit that wasn’t prevalent in my hometown growing up. I tend to prefer passion fruit tarts over lemon tarts, they both have that refreshing tartness, but passion fruit has this naturally sweet floral quality that I think just puts it over the top. Our passion fruit tart is made with our classic almond shortbread, the same tart dough recipe I first made 24 years ago during my apprenticeship, a super creamy passion fruit cream, and a thin layer of madeleine cake topped with super tart raspberry pure. The tart is simply glazed, embellished with gold leaf and fresh raspberries. It is not simply that simple, but oh so glorious.
