Pear and almond is a classic that I am pretty sure everyone knows about. Pear and Chocolate? I had to learn that one from the French. The first time I tried it was during my apprenticeship and I thought it sounded gross. Apparently the French know a thing or two about pastry, pears, and chocolate because it was glorious. I like a good quality milk chocolate with pears, I think they balance each other well, the juicy slight acidity of pear with the smooth creamy milk chocolate is nice. That mixed with the buttery crisp almond shortbread, the fragrant almond frangipane cream, mmmmmmmmmm!
