I like many am a creature of habit. While I like to explore and taste everything, I always return to what feels like home. I didn’t grow up eating pear danish and I’d bet you couldn’t have found one in my hometown. But there is something about a good danish, a little bit soft by the cream and fruit, crispy and flaky on the outside, a little bit sweet, but not too sweet. It’s perfection. Ours is made with our traditional croissant dough, a mixture of pastry cream and almond frangipane, fresh poached pears, more vanilla pastry cream, some apricot glaze to shine it up, and some chopped pistachios because they are the best and my most favorite nut of all time, forever and always.
