Poke the Bear is a based on the classic Tarte Tropezienne, a light brioche cake filled with light cream, doesn’t get any better right? We keep it fairly classic with a light brioche dough scented with vanilla bean and orange zest, we soak it lightly with orange blossom syrup and fill it with vanilla pastry cream and vanilla creme chantilly. We also add some candied orange zest, candied nuts, and a salted honey nut butter, but whatever.
