I don’t know that you can classify a store bought pop tart as an actual tart, but for most of us Americans it is probably the first tart we are introduced to, at least I know that this is true for me. We start this tart with classic French almond shortbread. It is very lightly baked and then spread with a thin layer of raspberry jam. The jam is topped with almond frangipane cream and studded with raspberries and blueberries before being baked again. When they are out of the oven and cooled we spread a thin layer of blueberry jam on top, then cover the tart in a delicate buttery crumble with just a touch of orange zest. A little vanilla yoghurt mousse cranks it to 11 and makes it sound healthier!
