From the outside that this cake looks dark, dense, and heavy, but looks are deceiving. The lightest dark chocolate mousse is combined with cocoa marzipan cake. I know what you are thinking, marzipan? Like the stale marzipan fruit candies? No, we take fresh marzipan that has an amazing green almond flavor, so light and different from toasted almonds, almost floral and fruity. Marzipan in cake holds so much air creating light soft cake. Before baking we sprinkle the cake with slivered almonds, cocoa nibs, and those amazing luxardo cherries. Each piece of cake is bathed in cocoa glaze and topped with cherry pate de fruit and thin piece of dark chocolate.
