I wanted to create a fruit tart that wasn’t your typical fruit tart and this is what I came up with. My daughters love mango lassis and they were the inspiration of this dessert. We start with our traditional almond shortbread crust and add a layer of diced mango dressed with lime zest. We make a very light mango cream thickened only with pectin and emulsified with greek yoghurt and cream, making a very light and fruit forward “mousse”. The tart gets a little mango glaze and fresh lime zest. Bright, fresh, and fruity for these warm days coming our way.
