I was gifted some new pastry molds from an old chef mentor of mine so I decided to bring back one of our old desserts. It used to have a different name, but that’s okay. This dessert has a lot going on, chocolate brownie cake, coffee crème brûlée, caramel, cocoa sponge cake, dark chocolate mousse, and vanilla chantilly all in a nifty little pyramid.
