I am a firm believer that no matter how crazy things are in the world, it is still important to share moments with the ones we love. For me, I like to do that with desserts, maybe with coffee, maybe at a park, maybe after a family dinner, but shared with the ones I love and that mean so much to me. Chocolate Cake is not my first go to dessert, but as I get older I really enjoy classic dark chocolate mousse. This is a simple cake with my favorite dark chocolate mousse made with Valrhona dark chocolate. What makes this cake also special is that the fudgy chocolate cake that the delicate chocolate mousse sits on is gluten free. Not in weird we replaced flour with a bunch of processed starches kind of way, but in just a classic rich flourless chocolate cake kinda way. The kind which is almost just like a baked ganache. A touch of vanilla chantilly to round things out.
