I first combined passion fruit with pumpkin almost nine years ago on our opening menu as one of our macaron flavors. Pumpkin can be a little bland and the sweet and sour quality of passion fruit really brightens up pumpkin. This cake has it all in my opinion. The soft spiced pumpkin cake and passion fruit cream on their own are amazing, the pumpkin mascarpone mousse and spiced chantilly mimic the best parts of pumpkin pie, and an extra layer of cake just balances everything out. It has become a shop favorite, at least amongst the team!
