It’s not just pretty, it’s pretty balanced. In this cake we use one of my favorite chocolate cakes of all times, the traditional Sacher cake. We make it pretty thin and layer it with pistachio bavarois, raspberry gelee, more pistachio bavarois, and dark chocolate mousse. Each bite is a little cakey, creamy, rich and chocolatey, and has the perfect balance of acidity from the raspberry gelee. Don’t even get me started on the crisp pieces of dark chocolate, pistachios, vanilla chantilly, and cacao nibs on top.
