As we approach Spring and Easter I always think back to the Easter baskets and Fannie May candy I received from my Godmother Irene. Irene has passed, but her memory has inspired this tart featuring some of the first fuits and vegetables of spring. Tarte Irene starts with our classic French pate sucre or sweet dough and is filled with Basque style cheesecake, the kind that is baked in a hot oven and gets a little toasty on top. Once it has cooled we mix together a little salad of fresh strawberries, rhubarb poached in light vanilla syrup, and a touch of strawberry jam to hold everything together. We cover all of that in light meringue scented with vanilla and lime. Freeze dried strawberry pieces and a baby strawberry macaron bring it all together.
