Tarte Margaret is a tart that just makes me happy. It has two of my favorite things combined in one, apricots and cheesecake! We fill a tart crust made from our classic almond shortbread with poached apricots and a traditional cheesecake custard. We bake in the Basque style, in a hot oven to caramelize the top. After it cools we add apricot sauce, more poached apricots, pistachio honey yoghurt, and a crispy phyllo for even more delicate crunching.
