This cake is named after my oldest daughter Adelaide Grace, she loves raspberries, especially the freeze dried ones we crush and sprinkle on top. When she was younger and would visit me at the shop she would snack on the freeze dried raspberries. This cake leaves a lot to the imagination as it is difficult to know what is all inside. We start from the bottom with a pistachio white chocolate brownie, a touch of raspberry jam and pistachio pot de creme. We cover all of that with raspberry mousse and then wrap in with a raspberry almond cake. My daughter also loves whipped cream so we top it off with soft whipped vanilla chantilly and a nice sprinkling of chopped pistachios and crushed freeze dried raspberries. It’s a pretty cake, it’s a tasty cake.
