I don’t know the origin of the turtle candy and I don’t think I want to know, but I do know that I have loved them since as far back as I can remember. Whether eating the candies, the better version known as pixies, or my favorite turtle sundaes from Brown’s Ice Cream Parlour, it is always a classic that I can rely on. Well now it has inspired our newest creation the turtle cheesecake tart. We start with our classic almond shortbread crust and fill it with butter pecan cheesecake. After baking and cooling we add a light milk chocolate chantilly. While you can’t see it, we add a layer of dark caramel sauce and a few grains of sel gris. Then comes a crisp lid of dark chocolate, a big buttery pecan, and some soft vanilla chantilly. It’s the best!
