This cake is one that I am bringing back from our original menu when we opened almost 10 years ago! I am sure that there are a probably a few changes to it from 10 years ago, but if so I can guarantee they are for the better. One thing I know that is different is the chocolate. In this cake I am focusing on Valrhona Caramelia which I am pretty sure might not have even existed 10 years ago. It is like the most super creamy milk chocolate ever, but still is chocolatey in flavor, I love it. In this cake I simply wanted to dress up some of my favorite things from childhood. Imagine having your favorite childhood cravings in something sleek and new. We take two kinds of chocolate cake, a cakey chocolate brownie cake and a soft, “box” like cocoa cake and layer them with super creamy malted milk chocolate mousse. The cake is glazed with shiny cocoa glaze for another punch of chocolate and garnished with mini chocolate crisps and a single malted milk ball, one of my favorite candies from childhood. I may have not told you this 10 years ago, but the name of the cake comes from the book The Outsiders. While I saw the movie as a youngster before reading the book, I was drawn to Two-Bit Matthews sitting down to watch cartoons with a chocolate cake and a beer!
