I wanted to call this something like smurf pie danish, but as I received a lot of blank stares from my team I figured I wouldn’t try and overcomplicate things. We make a pseudo vegetarian shepherd’s pie filling with sauteed mushrooms, onion, garlic, walnuts, and peas. Then we make super delicious buttery and cheesy mashed potatoes. Then we put that all into a croissant and bake it. Yes, it is good. Yes, it is super comforting. Yes it is good at breakfast. Yes, it makes a nice snack in the afternoon if you are craving something savory and not sweet. Yes, when combined with a cup of our tomato soup or a salad it is really nice light lunch. You should try it, smurf to it!
