What Gluten Free? FIGgedaboutit! Yes a truly tasty gluten free almond, pear, and fig cake. We start with a base layer of what I call almond croissant cake studded with poached pear and sprinkled heavily with sliced almonds. Then we add a layer of fig compote, fig mousse, and garnish the top with more fig compote, poached pear, cinnamon candied almonds, and vanilla chantilly. It’s probably my favorite cake at the moment and it happens to be gluten free, but you would never know that if I didn’t tell you!
