In a time when we seem to overthink everything, the opposite should be true when dealing with fresh fruit. I don’t remember the first time I heard the expression Keep It Simple Stupid, but it should really be the mantra when working with fresh fruit. Our Strawberry K.I.S.S. tart is about as simple as one can get. Fresh NC strawberries on top of sable Breton, a slightly salted buttery shortbread from France. A touch of strawberry jam, light vanilla cream, and a few pieces of freeze dried strawberry.
