Sometimes the most difficult thing when working with young chefs is to teach restraint. Sometimes something so simple as cheesecake, needs to be simple. Now, that doesn’t mean it’s easy, it just means that adding too much to it doesn’t make it better. It’s Cheesecake! is just that, a simple delicately flavored cheesecake with a buttery shortbread crust, blueberries dressed with a simple blueberry jam, and just a touch of candied lemon.
