I don’t really care what you are celebrating, but a cake makes it better! This is a simple vanilla citrus pound cake, based on the one I first made as an apprentice 26 years ago. Simply made with just eggs, sugar, fresh lemon zest, orange zest, lime zest, flour, baking powder, cream, and butter. When the cake is hot and out of the oven we brush it with a mixture of fresh squeeze citrus juices to add another layer of flavor to the cake. It is the perfect size for a small gathering or simple dinner party.
